The parallel universe is an alternate or 'parallel' universe that can be seen from the edge of the normal universe. It's only appearance is in I Dated a Robot. In the episode Fry poses the question "So there's an infinite number of parallel universes?" to which the Professor responds "No, just the two." The only apparent difference is that everyone in the parallel universe wears a straw hat.
